Camping Snack Mix

Camping Snack Mix

Ingredients
  • ½ cup butter
  • ½ cup Karo syrup
  • 1 cup brown sugar
  • 1 bag of Fritos
  • 1 small box of cereal (Crispix, Rice Chex, or Corn Chex)
  • extras (M&M's, choc chips, peanuts, etc)
  • large brown bag
  • wax paper
Instructions
  1. Put Fritos and cereal in brown paper bag. Bring butter, Karo, and brown sugar to a boil then pour over Fritos/cereal. Fold down top of bag and shake. Put in microwave 1 minute on high; remove and shake. Microwave again for 1 minute; remove and shake. Spread on wax paper to cool; stir every 10 minutes or so to break up clumps. Once cooled add extras then store in zip top bag or air tight container.

Bryce’s Microwave Caramel Popcorn

Microwave Caramel Popcorn
Ingredients
  • 4 quarts popped popcorn
  • 1 cup brown sugar
  • ½ cup margarine
  • ¼ cup light corn syrup
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda

  2. Place the popped popcorn into a large brown paper bag. Set aside.
  3. In a 2 quart casserole dish, or other heat-proof glass dish, combine the brown sugar, margarine, corn syrup, salt and vanilla. Heat for 3 minutes in the microwave, then take out and stir until well blended. Return to the microwave, and cook for 1½ minutes. Remove from microwave, and stir in the baking soda.
  4. Pour syrup over the popcorn in the bag. Roll down the top once or twice to close the bag, and shake to coat the corn. Place bag into the microwave, and cook for 1 minute and 10 seconds. Remove, shake, flip the bag over, and return it to the microwave. Cook for another 1 minute and 10 seconds. Dump the popcorn out onto waxed paper, and let cool until coating is set. Store in an airtight container.

Cheesy Broccoli Soup

Ingredients
  • 16oz package frozen broccoli pieces
  • 4 cups of water
  • 2 chicken bouillon cubes
  • 1 cup diced potatoes
  • 1 cup chopped onions
  • 2 cans cream of celery soup
  • 1lb of velveeta cheese
Instructions
  1. Boil broccoli and bouillon in water.
  2. Add potatoes and onions and cook until tender.
  3. Add soup and cheese, heat until cheese is melted.

Cream Cheese Frosting

Cream Cheese Frosting (for Pumpkin Bars)

  • 8oz cream cheese (soft)
  • 1 stick butter (soft)
  • 1 tsp milk
  • 3-4 cups powder sugar
Instructions
  1. Using a mixer blend cream cheese, butter, & milk then gradually add powdered sugar (3-4 cups) until desired consistency

Pumpkin Bars

Ingredients
  • 2 cup sugar
  • 2 cup pumpkin
  • 1 cup salad oil
  • 4 eggs
  • 2 cup flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp vanilla
  • 1 tsp pumpkin pie spice
Instructions
  1. Mix wet ingredients; then add dry. Pour into 11x16 or 2 9x13 pans for less deep bars. Bake 25 minutes at 350.

Traditional Baked Lasagna

Ingredients
  • 8 oz (1 package) Lasagna Noodles
  • 1 pound ground beef (or Italian sausage)
  • ¼ Cup chopped onion
  • 1 tsp salt
  • ½ tsp garlic powder
  • 32oz spaghetti sauce (any kind)
  • 15oz Ricotta cheese
  • ¾lb Mozzarella cheese (shredded)
  • (optional) ¼ Cup Romano cheese
Instructions
  1. Cook noodles. In a large skillet, cook meat, onion. Drain off excess fat if needed. Add salt, garlic and spaghetti sauce; bring to a boil and then reduce heat and simmer 15-20 min. Grease a 9x13 baking dish. Layer 3 strips of noodles; spread ⅓ meat sauce over them, then ⅓ of the Ricotta, then ⅓ of the Mozzarella. Repeat this with 2 more layers. Sprinkle top with Romano (optional) If you do not use the Romano cheese your last layer on top is Mozzarella.
  2. Bake at 350 for 35-40 minutes.
  3. Let sit for 10 minutes before cutting
